These Oatmeal Coconut Pecan Cookies are a great snack or dessert the whole family can enjoy!
INGREDIENTS
- 2 sticks softened unsalted butter plus 1 additional tablespoon (1 cup plus 1 tablespoon or 17 tablespoons)
- ¾ cup brown sugar, packed
- ⅓ cup granulated sugar
- 2 eggs
- 1 tablespoon vanilla extract
- 1¼ cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 2½ cups uncooked old-fashioned oats
- 1 cup finely chopped pecans
- 1 cup sweetened coconut flakes
INSTRUCTIONS
- Preheat oven to 350ยบ F.
- Use a spoon to mix together 2 sticks butter, brown sugar, granulated sugar, eggs and vanilla in a large bowl until well combined, but do not overmix.
- In another bowl, combine flour, baking soda, cinnamon and salt.
- Mix flour mixture into butter mixture, being sure not to overmix.
- Mix in oats, pecans and coconut.
- Grease baking sheet with 1 tablespoon butter.
- Roll dough into balls, approximately 1¼ to 1½ inches in diameter. Place dough balls onto baking sheet.
- Bake approximately 12 minutes until cookies are light golden brown.
- Recipe yields 3 dozen cookies.
